Blueberry pancakes

A little pleasure for brunch this weekend, pancakes!


But not any pancakes, blueberry pancakes! Nothing is simpler: prepare a classic pancake dough and add some blueberries on it. Then you will get some beautiful purple pancakes^^.


Short recipe, short article! Let’s see for the ingredients for less than 20 pancakes:
    • 250g flour
    • 30g sugar
    • 2eggs
    • 1 packet of baking powder (12g)
    • 65g butter
    • 1 pinch of salt
    • 30cl milk
    • Some frozen blueberries (as you prefer)

      Start by mixing the dry ingredients: flour, sugar, baking powder and salt. Add the eggs and mix well. Then add the melted butter and mix. Finally, pour the milk little by little and mix well each time you add some milk.


      Leave aside 1H in the fridge. You can also leave aside an entire night.

      COOKING

      When the dough has rested, proceed as you would for crepes! Heat a frying pan with some oil. If you want some classic pancakes you can cook them right away.
      Otherwise, add the blueberries (still frozen or not) to the dough and mix.


      On a hot oiled frying pan, make the pancakes. When you see some bubbles on top of the pancake, turn it over and let it cook for a few seconds.


      SERVING SUGGESTION

      If you want to increase the Canadian touch of this recipe, maple syrup is welcomed ;)
      For me, I prefer some whipped cream and some more blueberries :D
